Pasote Still Strength Blanco 110 Proof

Pasote is made from 100% estate-grown blue agave in the Jalisco Highlands, distilled in small stainless-steel pots with volcanic-rock-filtered well water in San Julián. After the agave has been evenly baked for two days, it is then crushed prior to being fermented in open-air stainless steel tanks with a proprietary blend of cultivated local yeasts. This expression is bottled straight off the still at 55% ABV, undiluted, delivering the purest, most concentrated expression of the agave. It is certified additive-free.

This expression delivers an intense agave-forward profile with layered minerality, pepper spice, tropical fruit, and roasted agave complexity.
