TATENOKAWA
A nearly two-century old brewery in the heart of Yamagata’s Ginjo Kongdom, combining passion and precision to create only junmai daiginjo sake. Driven by a young and dynamic team, it continues to innovate and push boundaries with their 1% polishing ratio sake.

DASSAI
This little gem in the Yamaguchi Prefecture is known for only making junmai daiginjo sake using highly milled yamada nishiki rice. our junmai daiginjo label noir (Best Sake 2019 & 2020) is a blend of dassai 23 and dassai 39 balanced to perfection by our master blender Regis Camus.

URAKASUMI
Owned by one of the most iconic figures of the sake industry, Saura San, this brewery is known for its unique “Kyokai no.12” yeast and providing sacred sake to the Shiogama Shrine. our acclaimed junmai daiginjo label orange is a blend based on Urakasumi’s Zen and three other sakes from this almost 300-year-old brewery.

KATSUYAMA
Established in 1688, Katsuyama is a brewery with a tradition spanning well over 3 centuries, created to brew top-class sake for the feudal lords of Sendai. the Isawa family carries on the reputation and tradition of its ancestors.

KONISHI
It is a great honor to work with Shintarô Konishi, 15th-generation and president of Konishi. The man who runs one of Japan’s oldest family-owned breweries in the Hyogo Prefecture. Developing our Junmai 12, a sake with 25% less alcohol and calories than classic sakes, without compromising on taste, was a technical challenge masterfully solved thanks to the great collaboration with Konishi’s Toji master and his team.
